Description

The famous Thai fruit dip, Nam Pla Wan (น้ำปลาหวาน), inspired Pridi to experiment with sweet fish sauce as an ingredient. They wanted the fish sauce to be present, but not to overpower the chocolate. And they needed the chocolate to support the idea of Nam Pla Wan. This worked best by making a slightly sweeter coconut milk chocolate as the base and then including the fish sauce as caramelized bites.

Tasting Notes: super smooth, sweet-and-salty, and uniquely Thai.
