Meet Silvia Guédez

Silvia Guédez began her journey in chocolate in 2015, after leaving a career in petroleum engineering and deciding to build a new professional path. She first created Silvia Guédez Chocolatier, a brand focused on bonbons, truffles, gifts, and chocolate experiences. Through years of study, practice, and direct contact with cacao, her interest gradually expanded from working with chocolate to understanding how it is made from the bean.

Levêlez Chocolate was born several years later from that deeper curiosity and from Silvia’s desire to create chocolate with its own identity. The brand allowed her to work more closely with Mexican cacao, explore origin and flavor, and develop bars that reflect both the character of the cacao and her personal approach to craftsmanship.

After more than a decade in chocolate, Silvia remains driven by the same things that started her journey: quality, curiosity, and the desire to create products that feel meaningful, with a clear sense of place and purpose.

MEXICAN CACAO WITH A SENSE OF PLACE

Levêlez creates its chocolate in Tabasco using carefully selected cacao from different regions of Mexico. Each bar is developed to preserve and express the cacao’s distinctive flavors, connecting the finished chocolate to its origin, landscape, and producers.

Every batch is carefully sorted, roasted, refined, and conched to achieve a clean texture and a balanced expression of flavor. Levêlez gives close attention to every stage of the process, allowing each cacao to express its natural character.

Levêlez pairs fine Mexican cacao with carefully selected ingredients such as Mexican vanilla, pure freeze-dried fruits, and nuts. Each recipe is developed to create a clear, balanced flavor experience while allowing the chocolate to remain at the center.

Steps Between Farm and You

Levêlez sources fermented and dried cacao either directly from Mexican cacao producers or through local cooperatives that collect and ferment cacao from farms within a specific region. Levêlez crafts it into chocolate at its workshop in Villahermosa, Tabasco. Bars are shipped to Yahara Chocolate in Wisconsin for fulfillment to selected specialty retailers or directly to you!
