Driven by an intense curiosity for chocolate-making born out of the 2020 pandemic, Fabiola saved a couple of pesos to buy a small chocolate melanger made from stones from the nearest volcano (el volcán de colima). Someone in her city helped her get cacao beans from Chiapas, Mexico and within a couple of hours she began making chocolate from mixing the beans and sugar in her melanger.
She became obsessed with this process and went down the internet rabbit hole where she stumbled upon Manoa and Dylan Butterbaugh's CraftChocolateTV. After watching every single one of their videos, she wondered if she could ever work as an intern with them. She decided to take a shot and email them. Two months later she was on a plane to Hawaii to learn everything about chocolate making from the best of the best.
After her experience in Hawaii, Fabiola returned home and began travelling to the south of her country in search of the best cacao beans. She continues to experiment, creating unique chocolate bar flavors that represent a combination of her personality and her native country of Mexico.
